Stuffed Peppers

2 large bell peppers

3 garlic cloves

1 sweet onion, diced

1 small green bell pepper, diced

10-15 cherry tomatoes, sliced

½ can black beans, rinsed and drained

1 green onions, diced

1 lb. ground turkey

2 tsp. Red Cayenne Sea Salt by Gustus Vitae Condiments

Extra virgin olive oil

Grated cheddar cheese


Preheat the oven to 350

Cut the bell peppers in half lengthwise (from top to bottom). Discard the stem and remove the white veins with a paring knife.

Over medium, heat 1 tablespoon of extra virgin olive oil in the bottom of your sauté pan.

Mince the garlic and add to the oil, followed by the diced onion and bell pepper. Sauté for 5 minutes or until the onion is translucent.

Add the cherry tomatoes, black beans, and green onion; sauté for another 4-5 minutes.

Put the ground turkey (or beef, chicken, etc.) in the sauté pan and season with the Red Cayenne Sea Salt and cook.

Lay the peppers hollow side up in your Duralex Oven Chef Baker. Use a spoon to fill the peppers with the turkey mixture (about ¼ filling per pepper half, it’s okay if they overflow).

Cover the baker with tin foil and bake for 50 minutes. Remove the foil and sprinkle each pepper with cheddar cheese. Place back in the oven for 7-10 minutes until cheese has completely melted.
