3 Cheese and Pesto Grilled Cheese

A delicious summer sandwich that is bright in flavor and appearance. You can use the cheeses below or a combination of your favorites.



Pesto, homemade or store bought

Gruyere cheese

Fontina Cheese

Gouda Cheese

1 loaf Italian bread

Clarified butter


Cut the ends off of the bread loaf, discard. Using a sharp bread knife carefully cut the top and bottom crust off of the loaf to expose the soft crumb, do this by gently skimming the surface.  Take your time to make sure you are not cutting too much off. After that, cut the bread in half lengthwise.

Cut the bread into equal portions and spread pesto on both sides of the bread, layer the cheese, and then sandwich the bread.

Put your Mauviel M’cook fry pan on medium heat.

Use a pastry brush to coat each side of the bread with clarified butter. Place into the frypan and cook each side for about 3 minutes or until crisp and golden brown. If needed, put a lid over the frypan to help the cheese melt.
