One Pot Pasta: Sweet Italian Sausage and Zucchini Linguine

One pot dinners are great for a number of reasons but the main one is there are fewer things to wash after you’re finished eating. This one pot recipe will please everyone!




Serves 4


3 tablespoons extra virgin olive oil divided

2 sweet Italian sausages, casings removed

1 Vidalia onion, diced

2 zucchini, sliced lengthwise, then thinly sliced into 1/2 circles

2 garlic cloves, minced

2 1/2 cups chicken stock

1/2 box (1/2 lb.) Linguine

Grated Parmesan

Salt and pepper to taste


Place a 9.5” Mauviel M’cook Sauté Pan over medium-high heat. Add 1 tablespoon of oil and cook sausage until browned. Break up the sausage while it’s cooking so it’s crumbled. Remove the sausage using a slotted spoon and discard the grease.

Put the sauté pan back onto the stove and add 2 tablespoons of oil. Sauté onions for 4 to 5 minutes, then add zucchini and garlic. Continue to sauté for 3-4 minutes. Season with salt and pepper.

Add the sausage back into the pot.

Pour the chicken stock into the pot and bring to a boil. Add the linguine and lower the heat to medium. Simmer for 15 to 20 minutes, stirring occasionally, until most of the liquid has evaporated and pasta is al dente.

Top the pasta with parmesan and toss until well combined and parmesan is melted. The melted creates creaminess. Taste, and add salt and pepper as needed.

Serve with crusty Italian bread if desired.
