Southwestern Pasta Salad

The Lekue Pasta Cooker allows you to make this recipe quickly and easily. It can be served as a side dish but since it’s packed with flavor and vegetables, it could certainly be enjoyed all by itself too.



Ingredients (serves 4)

½ lb. cooked pasta

1/4 cup light mayonnaise

¼ cup light sour cream

Southwest seasoning

1/2 cup cheddar cheese, shredded

1/2 cup canned corn kernels, rinsed and drained

1/2 cup black beans, rinsed and drained

3 sweet banana peppers, sliced

1/2 small red onion, diced

5 cherry tomatoes, quartered

1 scallion/green onion, sliced (for garnish)

Southwest Seasoning

2 pinches ground cumin

2 pinches chili powder

1 pinch oregano

1 pinch smoked paprika

1 pinch onion powder

2 pinches garlic powder

1 pinch black pepper

1 pinch cayenne pepper


Put the pasta in the Lekue Pasta Cooker. Fill Pasta Cooker with enough water to cover the pasta, put the lid on and cook in the microwave until pasta is al dente (exact time will depend on what size/shape pasta you use.)

While the pasta is cooking, prep all of the vegetables and make the southwest seasoning blend, set aside.

When the pasta is finished cooking, drain the pasta and transfer to a larger bowl. Add the vegetables and mix.

In a small bowl combine the mayonnaise, sour cream, and seasoning blend, whisk together.

Coat the pasta with the dressing and mix thoroughly. Cover with plastic wrap and let sit in the fridge for 3 hours.
