Italian Sausage and White Bean Cassoulet

The term “cassoulet” refers to a classical French dish consisting of white beans and various meats such as sausages, duck, pork, etc. This is a one dish meal that’s full of flavor, and aromas make it seem as if you slaved away all day in the kitchen.


Ingredients (serves 4)

2 pints cherry tomatoes

2 lbs. spicy Italian sausage

3 sprigs fresh rosemary

5 garlic cloves, crushed

1 tsp salt

½ tsp pepper

Extra virgin olive oil

Balsamic vinegar

2 ½ cups white beans, rinsed and drained



Preheat the oven to 425. Make sure the rack is in the bottom 3rd of the oven.

Put 3/4ths of the cherry tomatoes in the Mauviel M’cook Round Pan with handles (11”). Drizzle with extra virgin olive oil and sprinkle with salt and pepper.

Add the sprigs of rosemary and crushed garlic. Put the Italian sausages on top and prick generously with a fork. Put into the oven and bake for 30 minutes.

Remove from the oven and add the white beans and remaining cherry tomatoes, trying to have the sausages lay on top of the beans. Drizzle again with a little extra virgin olive and balsamic vinegar, and then season with one more pinch of salt and pepper. Return to the oven for another 20 minutes.

Serve with fresh baby arugula, baby spinach, or your favorite greens.
