Cilantro Lime Shredded Chicken

Chicken is a healthy protein that’s a good base for bold flavors. This marinade is full of bright flavors that will pair well with just about anything. Making this in the Lekue Steam and Roast yields juicy chicken due to the lid capturing the moisture and cleanup is easy thanks to the Emile Henry dish. Serve the chicken with tortillas or in taco shells, over rice, or add to soup.




4 limes, halved

5 cloves garlic, peeled

2 large shallots

1 bunch cilantro

¼ small cucumber

½ cup extra virgin olive oil

2.5 lbs. boneless/skinless chicken breasts



1 tsp red pepper flakes (if desired)


Using the citrus attachment on the Novis VitaJuicer, juice limes.

Change to the lid attachment and juice 1/3 of the cilantro, followed immediately by half of the cucumber.

Juice the garlic, another 3rd of the cilantro and then drizzle ¼ cup of the olive oil through the feed tube.

Juice the shallots, the remaining cilantro, cucumber and olive oil.

Mix together.

Place chicken breasts in a large Ziploc bag. Pour the marinade into the bag and shake to coat the chicken. Put the bag in the fridge and marinate at least 8 hours.

Preheat the oven to 350F.

Place the chicken in the large Lekue Steam and Roast. Pour about 1 cup of the marinade over the chicken, season with salt and pepper, and the red pepper flakes.

Put the cover on the Steam and Roast and cook for 1 ½-2 hours depending on the thickness of the chicken. The chicken is ready when it is pull apart tender.

Shred chicken with forks, tongs, or shredding claws.
