I was so inspired to use my Lékué heart shaped baking mold as we approach Valentine’s Day, and it is heart healthy too! <3 As I celebrate my sixth year at goal…150 pounds lighter…I am happy to report that I am still able to enjoy decadent desserts like this one without the guilt and also without feeling deprived! My good friend and amazing baker in his own right helped me to come up with the name ‘FAKE’…because you feel like you are eating a fattening cake that is filled with butter and sugar and wheat flour, except you’re NOT and I dare you to say that you could tell the difference! This recipe is gluten free, dairy free, nut free, paleo, and most importantly it’s POINTS FRIENDLY!

Makes 8 romantic chocolate hearts and each heart will cost you 6 PPV, well worth it! #POINTSWORTHY!

1 cup canned organic pumpkin

3 eggs

¼ cup coconut oil, melted

1/3 cup maple syrup

4 tbsp. coconut flour

2 tbsp. unsweetened cocoa powder

½ tsp. vanilla extract

¼ tsp. cinnamon

¼ tsp. baking powder

pinch of salt

½ cup Enjoy Life Chocolate Chips

Preheat the oven to 350°

Mix your wet ingredients: pumpkin, eggs, oil, vanilla, maple syrup. Next add your dry ingredients: baking powder, salt, cinnamon, cocoa powder, and coconut flour. Now mix in in the chocolate chips. Fill each of the 8 hearts in the Lékué hearts mold all the way to the top. Bake for 35-40 min. Let them cool for a bit and Happy Valentine’s Day! Eat up and enjoy your chocolate! Live, Eat, Lose!
