I confess that I eat dessert every single night and yet I still manage to maintain my 150 lb. weight loss! It’s thanks to the Lékué minute cake mold that I am able to do this so that I am insured portion control. I don’t know about you but I certainly cannot handle an entire cake in my house! This recipe is incredibly simple as it only has four ingredients…its gluten free, dairy free, paleo, weight watcher friendly, and it’s SO MOIST! I had it for dessert but I bet you could have it for breakfast! Why not?! Yum!

Serves 1 and will cost you 6 PPV. Add 2 more PPV if you include the chocolate chips…worth it! 😉


1 small very ripe banana

1 egg

1 heaping tbsp. crunchy almond butter

2 tbsp. unsweetened cocoa powder

1 tbsp. Enjoy Life Chocolate Chips (optional)



Mash the banana in a bowl with a fork till smooth. Next mix in in the almond butter followed by the cocoa powder. Now whisk in the egg. Fill one of your Lékué Minute Cake molds with the mixture. Microwave on high for 2 minutes! Pop it out of the mold and onto a plate and top with chocolate chips if desired.
