Apple Puff “Pizza” Tart

Ingredients (serves 6)

1 roll of frozen puff pastry

3 tsp unsalted butter

3 tbsp white granulated sugar

1 tsp cinnamon

3-4 granny smith or golden delicious apples

5 tbsp honey

1 8oz. container mascarpone cheese


Thaw puff pastry. Preheat oven to 375F. Place the Emile Henry Pizza Stone or Baking Stone in the middle of the oven while it is preheating.

Peel and core the apples, cut into quarters and slice into equal pieces.

Place the apples, butter, sugar, and cinnamon in the large Lekue Steam Case without tray. Close the lids and cook in the microwave for 3 minutes at 800watts. Check the doneness of the apples, if they are still too hard, cook longer in 20 second intervals. Set aside.

Take the preheated stone out of the oven carefully (with gloves) and place on a heat proof surface.

Roll the pastry directly onto the stone and using a fork, prick holes all over the pastry so it doesn’t puff up entirely.

Place in the oven and bake according to packing instructions, or until the pastry feels dry and the top is lightly browned.

Remove from the oven, let cool slightly and spread the mascarpone cheese all over the surface. Top with the “baked” apples and drizzle with honey.

Let cool slightly, cut, and serve.
