Macaroon Cake

So I made this cake for my gluten free/dairy free Mom, who couldn’t believe this recipe had no added fat to it! “I would pay $4 in a bakery for this!” she exclaimed! There is no doubt that I am a chocoholic and that most of my desserts involve chocolate…and while I know this cake for one doesn’t look like much, I assure you it is packed with a delicious coconut flavor and is surprisingly moist. So if you love a macaroon…try it! You can enjoy it with no guilt for only 4PPV or you can add 1 tbsp. of Enjoy Life Chocolate chips as my Mom did as her frosting on top of the warm cake!



2 tbsp. almond flour

2 shredded coconut

1 tsp coconut flour

½ tsp. vanilla

1.5 tsp almond milk

1 tbsp. maple syrup

1 egg white


Mix all of the ingredients right in your Lékué minute cake mold and microwave for 2.5 minutes. Pop the cake out of the mold and onto a plate. You will feel like you are eating a Macaroon! Enjoy!
