5 peaches (plus more for garnish)

3 cups blackberries

¾ cup granulated sugar

1 ½ cups water

2 bottles of Rose wine

1 cup cognac

¼ lemon or lime juice or margarita mix

In a large saucepan combine 2 cups blackberries, the sugar, and water. Bring to a boil and once boiling turn the heat down and let simmer for 10 minutes.

Remove from the heat and pour the blackberry syrup through a fine strainer into a bowl.  Gently press the blackberries to extract the juice but try not to break the blackberries. Discard the berries once all the liquid is through.

Place in the fridge to cool the blackberry syrup.

Cut the peaches into ½ inch pieces. Place in the bottom of a gallon pitcher.

Add the blackberry syrup, rose wine, cognac, and lemon/lime juice. With a long spoon stir everything together.

Cover with plastic wrap and place in the fridge for 4-24 hours.

Serve over ice and garnish with peach slices and fresh blackberries.
